Earlier this spring, Edsel participated in American Cancer Society's Food and submitted a recipe that he created last summer after he grew more cherry tomatoes that he could handle.
Edsel raised more than a thousand dollars from his friends, colleagues and clients. He made it to the Top 4 and his recipe was created by Top Chef finalist Chef Derrick Fox. Recipe below, and see Chef Derrick Fox's rendition of the recipe in the video below.
Edsel's Garden Tomato Sauce with Seared Shrimp
1 pound pasta (I prefer spaghetti)
½ pound shrimp (tossed in salt, pepper, and Cajun)
2-4 Tbsp olive oil
¾ cup Panko
4 large garlic cloves, finely chopped
3 pints golden cherry tomatoes
1-2 red chillies (optional)
½ tsp freshly ground black pepper
1 tsp kosher salt
Pinch of sugar
1 cup coarsely chopped fresh basil
Freshly grated Parmesan (for serving)
Step 1: Cook pasta in a large pot of boiling salt water until al dente: drain and transfer to a large bowl.
Step 2: Heat 1 Tbsp olive oil. Add panko and toss until an even light brown color. Put aside.
Step 3: Heat 1 Tbsp olive oil and sear the shrimp for 2 minutes on each side. Put aside
Step 4: Meanwhile, heat 1-2 Tbsp olive oil in a 12’ skillet or heavy saucepan over medium-high heat. Add chopped garlic, then tomatoes, salt, pepper, sugar, and red chillies. Cook, stirring occasionally, until the tomatoes burst and release their juices to form a sauce (6-8 minutes).
Step 5: Toss pasta in with the tomato sauce and basil. Top with panko and parmesan. Enjoy!
